Ingredients
2-3 Boneless Skinless Chicken BreastsTaco seasoning/ Enchilada seasoning or varies spices to taste (Chili Powder, Garlic Powder, Cumin)1 Can Diced Chillies5 Green Onions5 Whole Wheat Tortillas1 can enchilada sauce3 oz Monterey Cheese
Directions
Cook chicken breast in slow cooker with spices on low for about 4-5 hours
Add green onion and diced chillies. Cook for another hour.
Shred chicken breast
Preheat oven to 350
Poor 1/2 can enchilada sauce in casserole dish
Wrap shredded chicken and monterey cheese in tortilla
Place in casserole dish.
Do the same with remaining tortillas
Poor remaining sauce over
Cover with foil
Bake in 350deg oven for roughly 35 min. Remove foil and cook for another 10 min.
If desired broil for 5 min.
