Alma's Breakfast Oatmeal Pudding

Ingredients
2 1/4 c. quick cooking oats or 2 3/4 old fashioned3/4 c. brown sugar3/4 c. raisins or cranberries (dried)1 tsp. cinnamon1/2 tsp. salt3 1/3 c. milk, skim4 egg whites, lightly beaten1 tbsp. oil1 tsp. vanilla
Directions
Mix eggs, milk, oil and vanilla and add to dry ingredients. Mix well and pour into 8" square glass baking dish (coated with cooking spray.) Bake at 350 degrees for 55-60 minutes. Let cool and serve with milk or yogurt & fruit. Store left overs tightly covered in fridge. Serves 9.
