Strawberry Mango Muffins

2 cups wheat flour1 Tbsp baking powder1/2 tsp baking soda1/2 tsp salt1 large mango, peeled and diced15 large strawberries, washed and sliced2 large eggs1 cup plain low fat yogurt1 cup packed brown sugar4 tablespoons vegetable oil2 tablespoons vanilla extract
1. Position oven rack in the middle position and preheat oven to 400-degrees F. Line 2 standard muffin pans (12 muffins per pan) with paper cups.
2. Whisk flour, baking powder, baking soda and salt in a large bowl. In a separate bowl, whisk together mango pieces, strawberry slices, eggs, yogurt, sugar, oil, and vanilla extract. Add flour mixture and mix with light strokes until the dry ingredients are moistened.
3. Divide batter among the muffin cups and bake until a toothpick inserted in one of the muffins come out clean, 20-25 minutes.
Makes 24 standard muffins
