Ingredients
1/2 C. Diced Onions1 1/2 C. Diced Extra Firm Tofu2 Small potatoes diced1 C. Sliced Bell Peppers2 TBS Olive Oilsalt & pepper to tastemixed seasoning blends to taste. I use Trader Joe's Poultry Grill & Broil Seasoning Mix
Directions
Precook diced potatoes in a bowl in the microwave for 2-3 minutes until half cooked.
Warm Olive Oil in a large skillet over medium high heat. Add onions and saute until tender. Add potatoes and saute. Season with salt and pepper. Once onions are translucent add tofu. When potatoes and tofu have begun to turn golden, add bell peppers. Add seasoning mix. When bell peppers are tender, and potatoes are browned remove from heat and serve. Makes 4 2/3 cup servings.

    I do this also only I add mushrooms when I have some leftover in the fridge. Have you tried cajun seasoning? I use that sometimes for a boost of flavor. ^_^ - 5/21/10
