Spicy Sloppy Joes

1/2 lb. ground meat (I use lean organic)40 grams fresh tomato2 T marinara sauce (I try to find sugarfree versions - hard!)1 T ketchup (I use Heinz low carb)35 grams onion35 grams parsley with stems1 bay leaf1 ancho chili pepper with seeds (if you like it less spicy, leave out seeds) - chopped into small piecesgenerous teaspoons of oregano, thyme, & dried basil 2 garlic cloves, dicedsalt
Saute meat, then add onion, parsley & spices. When all are nicely browned and soft, add marinara, ketchup and enough water to cover and reduce to simmer. Let simmer, covered, until tender - perhaps 2 hours. Season to taste with salt and any additional pepper you may desire at this point. Makes 4 sloppy joes, or use in whatever way you like! (over pasta if you are not doing low carb, for example)
