Sneaky Tacos

1- 1&1/2 half lb lean ground beef1 24 oz jar of salsa (your choice of brand)1 packet of low sodium taco seasoning
Serving size: serves a family of 5, 2-3 tacos a piece with some left overs.
Brown the ground beef & drain well.
Add taco seasoning and 1 full jar of salsa (aprox. 24 oz). Bring mix to a high bubbling simmer, then reduce heat to medium low & simmer for 10-15 minutes. This cooks down the salsa and allows the seasoning to permeate the meat & salsa.
Serve tacos as usual- since everyone likes theirs differently, I only calculated nutritional value on the taco meat itself. We prefer soft taco size tortillas (this is a good method of portion control, too- add too much meat & you can't wrap it up!), and about 1/2 oz of grated cheddar, and a teaspoon of green salsa (Ortega makes a good one). If you like sour cream on your tacos, try a tablespoon of lowfat greek yogurt instead- yum!
Some variations:
Try ground buffalo or turkey for a lower-fat meat. Vegetarian crumbles work well also, but I would recommend that you brown them REALLY well first to improve the flavor.
Add some fresh cilantro or lemon thyme for a twist.
Use soft corn tortillas for a more authentic Mexican touch.
Try different varieties of salsa (or make your own) and different spice levels to mix it up.
Also, instead of plain old iceburg lettuce (which is basically water), try different varieties of shredded lettuce & greens.
