Silver Dollar Pecan Pancakes

Ingredients
2 cups pecan halves (toasted and pre-ground are best)4 large eggs1/4 cup water (add more, as needed)1/4 cup oil1/2 teaspoon salt2 teaspoons sugar2 teaspoons baking powder1 teaspoon vanilla
Directions
Combine ingredients in a blender. (Substitute egg whites for a reduced-fat, lower-calorie pancake.) Thin as needed with water to get a good pouring consistency. Cook on medium heat - a silver dollar cooking pan works very well. Makes about 21 three inch pancakes.
