Banana Oat French Toast

Ingredients
Directions
1 Cup of Vanilla Soy Milk1/4 cup of Old Fashioned Rolled Oats1tsp. of Pure Vanilla Exract.1 Medium Banana6 slices of whole Wheat BreadButter Spray (I used Crisco Oil - butter flavor)
Add all ingredients in a blender and blend for 2-3 minutes.
Let bread soak in mixture on each side add spray to pan and place battered bread to hot pan on medium heat until golden brown.
Since there is no egg be careful as a brown thin layer of mix appears try not to turn to early as thin layer will come off. If it does just continue to brown each side.
You dip in crushed nuts if you'd like or add slightly cooked slices of banana like I did on top and drizzled some Maple Syrup.
I didn't need any sugar in mix or to much syrup there was a natural sweetness from almond milk and Banana.
Delicious. Yumm and enjoy.

these have great flavor to them, but the reason I'm rating them only a 3 is because all of mine turned out soggy (they were browned on the outside but a soggy mush on the inside) and I'm not a fan of soggy bread. The flavor resembled banana nut bread though. Anyone know how to make them not soggy? - 4/15/11

Actually I made an error and wrote soy milk but I used almond milk instead along with the banana which gives a sweeter taste to it.

Very tasty! I made it for my husband & I this past weekend for the first time. It was hard to know when it was ready to flip, I ended up flipping his early & mine were nearly burnt. Another time or 2 & I'll have it down. Made with skim milk & topped with I Can't Believe It's Not Butter spray. Yum! - 6/28/10
