Talk About Good: Stuffed Zucchini

Ingredients
Zucchini, baby, 3 large Egg, fresh, 1 large *Progresso Bread Crumbs (Italian Style), 0.5 cup Mozzarella Cheese, part skim milk, 3 ozParsleySaltPepperRed Pepper Flakes
Directions
1. scrub and cut ends of zucchini and cut in half width wise
2. boil in 1 inch salted water for 5-10 min until tender
3. cut zucchini in half length wise and scoop out inner zucchini with a spoon and put in bowl...place zucchini boats to the side
4. mash up zucchini in a bowl with a fork, add 1 egg, 1/2 cup breadcrumbs, parsley, and 2 oz of mozzarella....mix well
5.In baking dish, fill zucchini boats with filling, top with remaining cheese and cracked black pepper.
6. Bake at 350 for 30 min.

serves 6 (1 half a whole zucchini)

    I cut calories by useing only the egg white,made whole wheat bread crumbs and mixed in my own italian seasoning to them,also added a little finely chopped green onion and fine chopped fresh mushroom to the mix...And they were FANTASTIC!!! - 5/3/10
