Greek Chicken with Zucchini, olives, and garlic

Ingredients
3 tbls Olive oil6 pieces of chicken (I use thighs)2 red onions, peeled and chopped3 cloves garlic, diced8 zucchini, thickly sliced4 roma tomatoes, peeled and roughly chopped2 tbls parsleysaltpepperjuice of 1 lemon12 green olives, rinsed in cold water
Directions
Saute the chicken in the olive oil. Remove and set aside. Add the onions and garlic to the pan and saute until softened. Add the vegetables and season with salt and pepper as needed. Return the chicken and add water to just cover. Stir well. Simmer 40 minutes stirring occasionally. Add the juice of 1 lemon and the olives and cook another 15 minutes until the sauce has thickened.
