Brown Rice, medium grain, 1 cup Diced tomatoes & Green Chillis Rotel, 1 canOld El Paso Enchilada Sauce HOT, 3/4 of canWater, tap, 1 cup
Pour 1 cup of brown rice, 1 can of Rotel tomatoes, and 3/4 of a can of Old El Paso Enchilada Sauce into a rice steamer. Add enough water to make the total amount in steamer 3 cups (a little less than one cup). Steam until done. Makes 3 1 cup servings.
Recipe is heavy on sodium, but has less calories, less fat, and less sodium than quick Spanish Rice microwavable pouches. Reduce sodium by mixing dry taco spice mix with water, and using real tomatoes instead of canned.
