Minestrone Soup - Slowcooker made Vegan

4.5 Cups vegetable broth28 oz can Diced Tomatoes15 oz can salad beans - drained2 carrots - diced1 celery stalk - chopped1/2 cup onion - diced1 t dried thyme1/2 t dried sage2 bay leaves2 cups Ditalini or other pasta - cooked1 medium zucchini - chopped
Combine broth, tomatoes, beans, carrots, celery, onion, thyme, sage & bay leaves in slow cooker. Cover and cook on LOW for 6-8hrs. or HIGH for 3-4 hours.
In last 1/2 hour, add ditalini & zucchini. Remove bay leaves - season to taste with salt & pepper. Garnish with basil - and/or parmesan cheese.
