Ann's Eggplant Parmigiana

Ingredients
i egg beaten1/8 cup water1 medium eggplant...1/4" slices ( I used about 460 grams or 1/2 large eggplant)1 pkg. shake and bake (barbeque or other)1 cup spaghetti sauce(meatless for lower calories)low fat mozzarrella cheese slices-42 Tbs. parmesan cheese
Directions
Beat egg and water. Dip slices in egg then dredge with shake and bake. Coat a fry pan with spray cooking oil then fry pieces until golden brown.

Place 1/2 of sauce in bottom of a baking dish, add eggplant and mozzarella slices then add remaining spaghetti sauce. top with Parmessan.Bake in oven for about 20 min.at 350
