Delicious Quesadilla

Ingredients
One large low-carb tortilla1/4 c. chopped onions1/4 c. red ripe tomatoes 1/4 c. black beans (can substitute or add chicken breast - not calculated in nutrition info.)1/2 c. Sargento reduced fat 4 cheese Mexican shredded cheese
Directions
Spray a small pan with non-stick cooking spray. Place tortilla on pan and sprinkle 3/4 of the cheese on half. Add veggies and beans and sprinkle with the remaining cheese. Fold over tortilla and cook until cheese is melting. Flip and cook until tortilla is slightly crispy and cheese is completely melted. Veggies may over flow - put them on your plate as a side item! Delicious and filling! Makes one quesadilla.
