Ingredients
Spinach, Fresh - 1 cupMushrooms, Fresh - .50 cupMozzarella Cheese - .50 cuponions, raw - .2 cup choppedgreen chili peppers - .25 cupCream Cheese - .25 cupCorn Tortilla - 2
Directions
Mix ingredients together
split in half and add to corn tortilla's
Roll tortilla's
place in small baking dish (or microwave dish)
bake for 20 minutes on 325
or Microwave for 1 minute, turn and microwave another minute

Smother w/ Enchilada (green) sauce or green Chili

    Very good. I also added chopped fresh garlic into the filling and added green enchilada sauce on top prior to baking. I baked for half an hour at 325 degrees. Husband approved! - 10/10/10

    This was a delicious dish! It was the perfect blend! Not too much cheese, not too much spinach. I modified a little bit and baked in the oven at 350 for 25 minutes. - 4/10/08
