Broccoli & Cauliflower Casserole

Ingredients
3 cups broccoli3 cups cauliflower1 can of campbells 98% fat free cream of chicken1.5 oz shredded cheddar5 Tbsp french fried onionpinch of salt and pepper
Directions
Cut the broccoli and cauliflower into bite size pieces and place in a zip-loc bag. Microwave for 10 minutes.

Then mix the broccoli/cauliflower in the soup and transfer to a sprayed baking dish. Top with cheddar and french fried onions.
Bake @ 375 for 20 minutes covered, then 20 minutes uncovered.

    Had this for dinner tonight and it was excellent. The whole family enjoyed it. Didn't have the fried onions and substituted 6 low fat ritz crackers crushed up and sprinkled on top with the cheese - very good! Served it with turkey and brussel sprouts - 12/26/11
