Crunchy Pea Salad

Ingredients
Peas, frozen, 1 package (10 oz)Cauliflower, raw, 1 cupCelery, raw, 1 cup, dicedSour Cream, reduced fat, 1/4Bacon, 4 medium slices, cookedSunflower Seeds, without salt, 1/2 cup, hulledFat Free Ranch Salad Dressing, 1/2 cupDijon Mustard, 1 tsp
Directions
In medium bowl, combine vegetables. In separate bowl, mix dressing, sour cream, and dijon mustard. Add dressing mixture to vegetables. Chill. Prior to serving add crumbled bacon and sunflower seeds. Makes 8 1/2-cup servings.

    Instead of sunflower seeds, I use a cup of roasted cashews. I leave out the bacon, and add a chopped green onion. It makes a good vegetarian main dish! - 7/5/10
