Cabbage and cauliflower soup

Ingredients
2 to 3 cups cabbage chopped2 cups cauliflower chopped12 fl oz V-8 juice3 strips celery (4 inches long) finely minced1 can diced tomatoes (14 oz can)1 can Rotel diced tomatoe and green chilis, Mild (10 oz)1 box clover calley beef broth (32 oz)1 small onion1 tsp parsley
Directions
Combine all ingredients, bring to a rapid boil, lower heat cover and simmer until cabbage and cauiliflower is tender, about 2 hours.
