1 15oz can of chickpeas (garbanzo beans)4oz silk lite plain soymilk1/2 cup tomato sauce1/2 of a large onion1/2 tsp ground cumin1/2 tsp ground turmeric1/2 tsp curry powder1 garam masala1 Tbsp olive oil
Clean and chop up spinach.
Chop up onions.
Drain can of chickpeas.
Sauté onions in the olive oil until soft. (about 5 min)
Add chickpeas, spices, soy milk, and tomato sauce.
Bring to a boil, then turn heat down to med. and stir until some of the liquid evaporates.
Add spinach when sauce is at desired consistency, and cook for another minute.
Serve with rice and naan. Enjoy.
