Orange Ginger Chicken

Ingredients
Thin Chicken Breast, no skin, trimmed, 1 lbLight Olive Oil, 1 TbspFlour, white, 1/4 cupSalt, 1/2 tsp Orange Juice, 1 cup Ginger Root, 1 tspGarlic, 1 tsp Grey Poupon Dijon Mustard, 1 heaping TbspScallions, raw, 2 tbsp choppedSliced Orange for garnish (Optional)
Directions
Rinse and trim chicken cutlets, cut in half. (Pound thin under plastic wrap if using normal chicken cutlets). Sprinkle salt on cutlets and lightly dip each in flour. Over med-high heat, heat olive oil in skillet. Add chicken when hot, cooking until juices run clear, about 4-5 mins per side. Place chicken on a plate, cover to keep warm. Reduce heat to medium and add juice, ginger, garlic, mustard, and scallions. Stir to combine, scraping bits from the bottom of the pan. Reduce by about half, 5-10 mins. Adjust seasonings if desired. Add chicken back to pan and coat in sauce. Garnish with fresh orange slices and/or orange zest, if desired, and serve immediately.
