Curried Chick Peas with Brown Rice and Lentils

Ingredients
4 teaspoons olive oil1 cup onion, chopped3 cloves garlic, minced1 tablespoon ginger root, grated1/4 cup fresh cilantro, chopped2 teaspoon ground cumin2 teaspoon curry powder1/8 teaspooon cloves1 teaspoon chili powder1 bay leaf1/2 cup water1/2 cup lite coconut milk1/4 cup apricot preserves3 1/2 cups diced tomatoes with roasted red pepper3 cups steamed broccoli and cauliflower2 cups cooked brown rice1/4 cup cooked lentils
Directions
Saute onion, garlic, and ginger root in olive oil over medium heat. Stir in spices, water, tomatoes, chick peas and preserves; heat through and lower heat. Stir in cauliflower just before serving. Serve over hot rice and lentils. Serves 4.
