Five Onion Soup

Ingredients
4 Leeks3 Vidalia Sweet Onions1 Red Onion3 Cloves Garlic3 Scallions2 tbsp Olive Oil1 cup White Wine4-6 cups Beef Stock2 Beef Bullion Cubes2 tbsp butter1/4 Cup Sugar1 tbsp Flour1 sprinkle Thyme1 Bay LeafFresh Parmesan Cheese
Directions
Slice Onions, Leeks, Scallions, and Shallots in a food processor. Heat 1 tbsp olive oil and 1 tbs butter in 2 separate pans, add onions and 1-2 tbsp of sugar to each, cook onions until brown 10 mins, combine onions into large stock pot and add garlic, cook for 3-5 mins longer. Add Thyme, Salt, Pepper. Remove onions from heat and add 1 tbsp of flouer and stir into onions. Add back to heat and add beef broth, wine, bullion cubes, 1 tbsp sugar and bay leave to pot and let simmer for 20-30 mins. Top w/ Fresh Parmesan Cheese! Yum!

    I am diabetic and have sodium restrictions: Skipped the sugar and cubes, since my homemade broth is very concentrated. The butter provided enough salt for us. This is very yummy. - 8/13/20

    I just made this soup and after reading the other comments, I left out the sugar. I also added a pinch of chilli pepper as we like spicy things. Would be perfect for a cold winters evening. - 9/10/12

    I used a slightly different mix of onions, but the results were still quite good. I also pureed the blend before serving it. I might try it without the sugar next time: the caramelized onions seem sweet enough. - 2/17/12

    This was much sweeter than a traditional french onion soup. I would leave out the sugar next time, it would be sweet enough without it. I had to use a little more olive oil than it called for to brown the onions, and it took longer to brown them than ten minutes b/c it is a lot of onion! - 10/21/10
