Light Caesar Salad

Ingredients
4 c. torn Romaine lettuce1 slice whole wheat bread1 clove garlic2 tbsp. simulated bacon bitsCaesar Salad dressing
Directions
Toast bread. Peel and cut garlic in half crosswise. Rub warm toast with cut side of garlic. Tear up lettuce leaves and put in a bowl. Mince remaining garlic on top of lettuce. Cut toast in cubes to make croutons. Sprinkle on top of salad. Sprinkle simulated bacon bits on top of that. Serve with Caesar Salad Dressing.

I just dip my fork in a small cup or bowl of the salad dressing, and then fork up some salad afterwards, rather than pouring the dressing on my salad. I get all the taste of the dressing, but use only a fraction what I would if I poured it over the salad.

Another option would be to use balsamic vinegar and olive oil.
