Whole Wheat Banana Applesauce Muffins

Ingredients
1 Cup of buttermilk1 Cup of quick cook oats1/2 Cup of packed brown sugar1/2 Cup of Splenda1 tsp of baking powder1/2 tsp of baking soda1 tsp cinnamon1 Cup of whole wheat flour1 Egg2 small bananas1/2 Cup of applesauce 1tsp of vanilla
Directions
Soak 1 cup of quick cook oats in 1 cup of buttermilk for about 30 minutes, or microwave about 45 seconds. Mix all dry ingredients together, add all wet ingredients and mix until well blended. Drop in bananas and beat with mixer until well mixed. It will be a little chunky. Bake at 375 for 30 mins or until done. Makes 12 regular sized muffins.
