Ingredients
Assemble in a large bowl and then refrigerate 2 hours or more.Combine:6 cups cooked, cubed Yukon Gold potatoes1 1/2 cup shredded cheddar cheese, 2%2/3 cup black beans rinsed and drained (Use Bush's)2/3 cup chopped sweet red pepper1/2 cup thinly sliced celery2 TBS minced flathead parsleyCombine in a small bowl:and chill. Pour over potato mix.3/4 cup ranch dressing1/2 cup chunky salsa1/2 teas. salt (optional)

Cook, peel and cube potatoes

    Good recipe but you forgot the 1/3 cup thinly sliced onion. That makes it better. You can use your favorite reduced fat or calorie ranch dressing instead. - 5/11/10
