Lasagna Rolls

Ingredients
1 C. part-skim ricotta cheese2 eggs beaten2 ounces shredded mozzarella cheese4 T. grated parmesan cheese1/4 t. oregano and basil leavesdash garlic powder8 curly edged lasagna noodles (cooked and drained) - can use whole wheat if desired1 C. Tomato sauce
Directions
Preheat oven to 350. Spray 8 x 5" glass pyrex with non stick cooking spray. In small bowl combine ricotta cheese, egg, mozzarella cheese, parmesan cheese, and the seasonings, mixing well. Place cooked lasagna on a damp towel and spoon 1/8 of the cheese mixture lengthwise along the center of each noodle; starting from narrow end, carefuly roll each noodle to enclose filling. Place rolls in baking pan, pour tomato sauce over top. Bake until heated through, about 35-40 minutes. Serving size is 2 rolls.

    the only thing I add is sauteed spinach which has been sauteed with garlic in a non stick skillet with a very small amount of olive oil. Delicious - 6/12/10

    SCRUMPTIOUS!! Based on advice from others I sauteed a thinly diced carrot with garlic, then added an entire bag a spinach and put into the mixture. This gave the filling a little more interest, as well as more veggies. I also used pasta sauce that I had on hand and egg whites for eggs. A knockout! - 8/28/13
