Low Fat Quiche Lorraine

1 9” pastry piecrust1 ½ cups egg substitute1 cup shredded 2% white cheese¾ cup of fat free sour cream8 pieces lower sodium turkey bacon crumbled½ cup shredded 2% sharp cheddar½ cup chopped spinach (fresh)1 package onion soup mix1/8 tsp cayenne pepper¼ tsp black pepper
Directions: Preheat Oven to 425°
Whip eggs, sour cream, black pepper, cayenne and soup. Spread cheese ham and spinach in the bottom of the piecrust. Pour egg mixture into the pie crust. Put sharp cheddar on the top of mixture. Cook for 15 minutes at 425°. Reduce heat to 300° and cook for 40 minutes. Remove from oven let set for 10 minutes.
*I would recommend Swiss or Monterey Jack for white cheese. Fresh spinach works best for this recipe. If you want to use ham instead add ¼ tsp of salt.
