Vegetarian Chili

Ingredients
1 14. oz can Chickpeas1 14. oz can Pinto Beans1 14. oz can Kidney Beans1 14. oz can Sweet Corn3 14. oz can Diced Tomatoes1 Green Bell Pepper, diced1 Medium Onion,diced1 large potato, cooked and cubedMorning Star Meal Starters Grillers Crumbles, 2.66 cup1 jalepeno (optional), small dice1 Tbsp EVOO1 tbsp oregano1 tbsp cumin1 tbsp chili powder2 bay leaves2 cloves garlic
Directions
Add EVOO to medium heat in large crock pot. Saute garlic and add onion and green pepper, cook for 3 minutes until it starts to soften. Add Morning Star Crumbles, jalepeno if using and spices. Cook additional 2-3 minutes. Meanwhile open beans/corn and rinse in a strainer before adding to pot. Add tomatoes and potatoes, cover pot and let simmer for 30 minutes. Remove bay leaves before eating. Makes approx. 10 - 1 & 1/2 cup servings
