Pecan Crusted Chicken

Ingredients
Dash of Cayenne Pepper1/4 tsp salt1/8 tsp pepper1 egg white1/2 tsp dijon mustard1/4 cup bread crumbs1/4 cup finely chopped pecans, toasted & cooled2 Tbsp parsley3/4 lb chicken breast, pounded thin
Directions
Combine cayenne pepper, salt & pepper, bread crumbs, pecans & parsley in a shallow dish. In another dish, whisk egg white & Dijon mustard together. Dredge each breast into egg mixture and then into bread crumb mixture. Place chicken onto a sprayed baking sheet. Bake 10-12 min @450. Makes 3 servings
