Fava bean puree

Ingredients
1 c. fava beansjuice from one lemon1 tbsp. olive oilsaltpepper1 clove garlic, minced
Directions
Boil the fava beans in salted water until tender (approx. 10 minutes).

Drain and cover with cold water. Peel the skin from the fava beans.

Combine beans with the rest of the ingredients in a food processor and pulse until smooth. Add salt and pepper to taste.

Serve on crackers, crostini, or with vegetables.
