Almond Cookies GF SF

Ingredients
2 C. Finely ground Almond Flour/Meal1/4 cup xylitol1 Tbsp almond extract1 Tsp vanilla Extract2 eggs1 pinch salt1 Tbsp coconut oil1/2 cup pine nuts
Directions
Preheat oven to 350. In a large bowl, mix well all ingredients except the pine nuts. scoop out portions of cookie batter, shape into a ball and dip it in pine nuts. Place on cookie sheet, lined with parchment paper. Bake for 12-20 minutes (depending on size of cookie) until pinenuts start to brown. Allow to cool completely before removing from pan, otherwise they will crumble.
