Strawberry Charlotte Verrines

2 tbsp. plus 2 tsp. sugar, divided1 tbsp. lemon juice1 c. Greek yogurt8 lady fingers, cut into bite-sized pieces12 large strawberries, or 16 small strawberries, cut into bite-sized pieces1 tbsp. blanched pistachios, coarsely chopped
1. Place 2 tbsp. sugar in small, heat-proof bowl. Pour 3 tbsp. boiling water over sugar, and stir until sugar has dissolved. Stir in lemon juice. Cool.
2. Whisk together greek yogurt and remaining 2 tsp. sugar.
3. Dip ladyfingers into lemon syrup and arrange them in the bottom of 8 glasses. Spoon 1 tbsp. yogurt into each glass over the ladyfingers.
4. Gently toss strawberries in remaining syrup, and arrange over the yogurt. Spoon remaining yogurt on top of each cup and sprinkle with pistachios. Serve with spoons.
