Roasted New Potato casserole

Ingredients
1 pound of new potatoes, washed and cut into cubes1/4 stick low fat margaraine1/4 c. of shredded cheddar cheese1/4 c. of fresh bacon bits1 packet of Hidden Valley Ranch dressing mix
Directions
Put cut potatoes into a big ziplock bag with hidden valley dressing and shake until well coated. Pour into a baking dish and put pats of margarine all over the potatoes. Bake covered, for 30 minutes on 400 degrees. Remove cover and sprinkle cheese and bacon bits over top. Broil for the last 15 minutes.

Great with salmon or pork.
