Smoked Gouda Eggplant, 1 roll per serving

1 medium eggplant, thinly sliced lengthwise3 plum tomatoes, thinly slicedsmoked Gouda or other smoked cheese, thinly slicedBasil, fresh leavesBalsamic vinegarsalt
Lay sliced eggplant in a single layer and sprinkle with salt. Let sit for 10 minutes to decrease the bitter flavor of the eggplant. Rinse the salt off of the eggplant. Place eggplant to a baking sheet and broil in oven approximately 10 minutes until eggplant is tender.
Remove eggplant from the oven and create eggplant rolls by placing a slice of cheese, slice of tomato, and basil leaf on each eggplant slice. Roll the eggplant slice around the filling and return to baking sheet.
Broil eggplant rolls until the cheese is melted.
Serve with balsamic vinegar drizzled over the top of the rolls.
