* Green Pepper (bell pepper), 1 medium, chopped * Onion, raw, 1 medium (2-1/2" dia) * Garlic, 3 clove, minced * Olive Oil, 1 tbsp * Stewed Tomatoes, Canned, No salt, 3.5 Cup (2 12oz cans), undrained * Beans, black, 1 can, drained * Beans, white, 1 can, drained * Yellow Sweet Corn, Canned, 1 can, drained * Brown Rice, medium grain, 1 cup (uncooked) * 2.5 cups water * 1-2 Tbsp Chili Powder * 1.5 tsp cumin * 0.5 tsp cayenne
Saute pepper, onion, and garlic in oil. Mix in all other ingredients; cover and simmer 25-30 minutes until rice is cooked.
