Peach Two Berry Crumble

1 cup peaches, canned in water, drained2 cups fresh raspberries3 cups blueberries, frozen, unsweetened1 tsp ground cinnamon1/3 cup brown sugar, packedTopping:3/4 cup oat flour3/4 cup rolled oats1/4 cup packed brown sugar1/2 tsp ground cinnamon1/2 cup non-hydrogenated margarine
Combine the fruits in a large microwavable bowl. Sprinkle with cinnamon and sugar: stir to combine with fruit.
Combine the oat flour through cinnamon in a medium bowl. Cut in margarine with two forks. Mix until crumbly. Spread evenly over top of the fruit mixture.
Microwave the dish for 8 minutes. Rotate the dish a half-turn. Microwave for another 6 to 8 minutes, until bubbly and the fruit is tender.

The topping is the recipe I have used for 40 years. For the filling: whatever fresh or frozen fruits are around; instead of sugar: a spoon of jam and a bit of tapioca. Pears, peaches, nectarines, apples, any berries: all work very well. To cook in conventional oven: 350F for 45 minutes - 10/6/10
