Chicken and Mushroom Cassserole

Ingredients
3 tbsp olive oil2 onions, sliced8 skinless chicken thighs1 tbsp gluten free flour, seasoned with a little salt and pepper1 cup vegetable (or chicken) stockgrated zest of 1 orangejuice of 2 oranges50 ml red wine1 tbsp Worcestershire sauce2 cups button mushrooms, sliced2 tbsp fresh parsley, choppedsalt and pepper
Directions
Fry the onions in 1 tbs of the olive oil.

Toss the chicken in the seasoned flour. Brown the chicken in the remaining oil. Add the stock, onions, orange juice and zest, wine, sugar and Worcestershire sauce. Bring to the boil, then reduce the heat, cover and simmer for 25 - 30 minutes until the chicken is tender.

Stir in the mushrooms and cook for 5 - 10 minutes. Season to taste with salt and pepper.

Sprinkle with parsley and serve with boiled rice.
