Shoepeg Corn Salad

Ingredients
2 (12oz.) cans whole kernel shoepeg corn, drained3/4 cup diced cucumbers1/4 cup diced onion2 small tomatoes, chopped1/4 cup sour cream2 tbs. mayonnaise1 tbs. vinegar1/2 tsp. salt1/4 tsp. dry mustard1/4 tsp. celery salt
Directions
Combine corn, cucumbers, onions and tomatoes in salad bowl. Blend sour cream with mayonnaise. Add remaining ingredients. Add sour cream mixture to corn mixture. Toss gently to coat vegetables. Chill corn salad thoroughly.

    Took this to a potluck and it was a big hit! Someone even asked me to email the recipe to them! The only thing I changed was that I used less salt and added a 3rd can of corn so that it would yield a little more. Will definitely make this again! - 7/25/08
