Curried Broccoli Salad

3 bunches broccoli, florets removed2 slices bacon, chopped3/4 c. raisins1/2 c. hulled sunflower seeds1 small sweet onion, chopped fineDressing6 Tablespoons rice wine vinegar4 Teaspoons sugar2 Teaspoons curry powder1/4 Teaspoon kosher salt4 Tablespoons extra virgin olive oil
Fill a pot with water and bring to boil. Prepare a separate bowl and fill with cold water and ice. When boiling, add broccoli florets. Boil broccoli for 1-2 minutes, and then use a slotted spoon to quickly transfer to cold water. Drain and chill.
Cook the chopped bacon in a skillet over medium-high heat. Drain on a paper towel and set aside.
Combine the dressing ingredients in a large bowl. Chop the chilled broccoli coarsely and add to the bowl along with the bacon, raisins, sunflower seeds and chopped onion. Mix thoroughly. Best if chilled for 1-2 hours before serving. Bon appetit!
