Shari's Smokey Black Bean Soup

1 lb lean ground turkey (or chicken)2 16 oz cans black beans1 cup carrot (diced)1 cup celery (diced)1 cup onion (diced)1 tbsp ground cumin (or crushed seeds)1 tbsp dried parsley1 tbsp dried orgeano1 tsp black pepper
1. Brown ground turkey in stock pot.
2. Remove turkey to bowl and add onion, carrot and celery. Cook until vegetable soften.
3. Rinse and drain the cans of black beans and add to the vegetables.
4. Add the spices and the turkey
5. Simmer for approximately 1 hour (until all the flavors blend) -- the longer you simmer, the better the flavor.
Makes 14 1-cup servings.
