Carrot, Apple, Raisin, Curry Salad

Ingredients
2 c. carrots1 apple, medium1/4 c. raisin1/4 tsp curry powder2 tbsp mayo1 c. water
Directions
Put raisins in a bowl and add HOT water, let sit 3-5 minutes and then place in microwave for another minute. Chop the apple. Shake the apple, shredded carrots, and curry powder (can sprinkle to taste) in a closed tupperware container until apples and carrots are coated. Drain the raisins and add to carrots and apples, then mix in the mayo.

This can be eaten alone or on top of a bed of lettuce (and/or lettuce bed with a serving of tuna). You can add walnuts, grapes, or any other item that suits your taste. Just remember to add those factors into your dietary numbers.
