Easy 3 Step Low Fat Cheesecake

1 graham cracker pie crust (I use Aldi's)2 packages Neufchatel cheese, 8 ounces apiece3/4 cup sugar2 eggs1 teaspoon vanilla
Preheat oven to 350 degrees Farenheit. Bring cream cheese to room temperature to soften it. Blend the cream cheese, sugar, and vanilla together with electric mixer until creamy. Add the 2 eggs, and continue to blend until very well mixed. Pour into pie shell and bake, uncovered, for 40 minutes, or until almost set in center.
A long time ago I got this recipe from Philadelphia Neufchatel cheese, which is just basically a lower fat version of cream cheese.
