Lemon pudding

3/4 cup sugar1/4 cup corn starch2 1/2 cups milka pinch of salt2 tbsp lemon zest (about 3 lemons)3 egg yolks1/2 cup lemon juice2 tbsp butter
Stir together sugar and corn starch in a pot. Add milk gradually while stirring, stopping to smooth out lumps before adding more milk. Put over medium high heat and add salt, lemon zest, and egg yolks. Stir constantly until thickened. Remove from heat and add butter, then lemon juice, and stir until smooth. Strain if desired. Cool at least 2 hours before serving; pudding will thicken as it cools.
