Home Made Tomato Sauce (Dukan)

Ingredients
70g (2 1/2oz) finely chopped onion6-8 fresh tomatoes, peeled and seeds removed OR1 x 410g (14 1/2oz) can peeled tomatoes1/2 teaspoon basil1/2 teaspoon fresh mint1/2 teaspoon tarragon1 clove garlicSalt and pepper to taste.
Directions
Put the chopped onion and fresh (or canned) tomatoes in a non-stick saucepan, add salt and pepper to taste.

Cover and simmer over a low heat for 20 minutes.
Let the sauce cool then add the herbs.

Makes 4 (1/4 cup) servings
