Crustless Quiche

Ingredients

2 eggs1/2 cup half and half1/2 cup skim milk1 cup sliced peppers, any color1/2 cup cooked spinach1/2 cup sliced hard parmesan cheese1/4 cup 2% mozerella1/2 tsp dried mustard1/2 tsp salt1/2 tsp pepper
Preheat oven to 375 degrees.
Whisk eggs, milk, cream, mustard, salt, pepper.
Saute peppers in small pan coated in olive oil.
Saute spinach in small pan coated in olive oil.
Add veggies to egg mixture.
Add cheese and whisk.
Separate into six muffin cups, coated in olive oil. Be sure to evenly distribute veggies and liquid.
Bake approx 30 min at 375 degrees. Let set for 5-10 minutes.
