250g cooked cold chicken breast, chopped or shredded50g raisins50g dried apricots, chopped3/4 tsp curry powder2 tsp mango chutney3/4 tsp lemon juice3 tblsp low fat mayonnaise3 tbsp virtually fat free fromage frais or plain fat free yogurtsalt, pepper to taste
mix together the mayonnaise, fromage frais, curry powder, mango chutney and lemon juice and season to taste. stir in the chicken, raisins and apricots. chill
delicious in sanwiches or on baked potatoes. can also be served with a salad.
