Nectarine and Chickpea Couscous Salad

Ingredients
1 1/4c Water1 c Uncooked couscous2 Tbsp fresh lime juice1 Tbsp honey1/2 tsp salt1/2 tsp ground cumin1/2 tsp ground corriander1 1/2 cups coarsely chopped nectarines 1/2 cup coarsely shopped spinach1/4 cup chopped green onion1 15oz can chickpeas (garbanzo beans)
Directions
Boil water and stir in couscous. Cover and let stand 5 mins. Combine lime juice through corriander. Whisk. Add remaining ingredients and toss.

Makes 8, 1/2 cup servings.
