Pumpkin Fritters

Ingredients
1 cup cake flour3 cups cooked, mashed pumpkin20 ml baking powder2 ml salt2 extra large eggsOil for frying
Directions
Makes 25-30 fritters

Mix all ingredients together by hand
Fry spponfuls of the batter in shallow oil until golden brown on both sides.
Serve as is or with a sprinkling of cinamon sugar
