Chickpea Orzo Pilaf

1 tbsp olive oil1 cup chopped onion1 medium carrot, finely diced2 garlic cloves, minced1 1/2 tsp curry powder1/2 tsp thyme1 cup orzo5 1/2 cup low sodium chicken broth1 can chicpeas, rinsed and drained2 tbsp chili sauce
Makes 8- 1 cup servings
Heat oil over medium heat in a large, deep skillet with lid. Saute onion, garlic, and carrot with the curry and thyme until the onion is soft. Add orzo and saute until the pasta is lightly browned. Stir in the chicken broth, chickpeas, and chili sauce; bring to a boil. Cover with a tight fitting lid and reduce the heat to low. Simmer the stew 12 minutes, stirring occassionally, or until the orzo is fully cooked. It should be a little brothy, not dry.
