Chickpea Orzo Pilaf

Ingredients
1 tbsp olive oil1 cup chopped onion1 medium carrot, finely diced2 garlic cloves, minced1 1/2 tsp curry powder1/2 tsp thyme1 cup orzo5 1/2 cup low sodium chicken broth1 can chicpeas, rinsed and drained2 tbsp chili sauce
Directions
Makes 8- 1 cup servings

Heat oil over medium heat in a large, deep skillet with lid. Saute onion, garlic, and carrot with the curry and thyme until the onion is soft. Add orzo and saute until the pasta is lightly browned. Stir in the chicken broth, chickpeas, and chili sauce; bring to a boil. Cover with a tight fitting lid and reduce the heat to low. Simmer the stew 12 minutes, stirring occassionally, or until the orzo is fully cooked. It should be a little brothy, not dry.

    This was great. I'm definately going to make it again. I'm going to add more curry because the chicken broth kinda over powered it. I'm also going to switch some of the chicken broth for water. This was my first taste of chickpeas, and it was great! - 3/4/09
