Slow cooker italian chicken

Ingredients
2 small squash (zuccini, summer or both)1 medium onion1/4 sliced olives1 garlic clove8 3oz chicken thighs boneless skinless1 tsp italian seasoning1/8 tsp salt1/4 tsp pepper1/4 cup vegetable broth2/3 cup tomatoes (roma is best)1/3 cup shredded parmesan cheese
Directions
In slow cooker combine squash, onion, olives and garlic. Top with chicken. Sprinkle chicken with Italian seasoning, salt and pepper. Pour broth on.

Cover and cook on low for 5-6 hours.

Using a slotted spoon tranfer 2 chicken thighs and 1/4 vegetables to indiviual plates. Discard cooking liquid.
Divide and spinkle the tomatoes and cheese among the plates.
